From start to finish it's only 3 hours to cook these competition quality ribs. They are guaranteed to be tasty and some of the best you have ever cooked.
One of the tricks to cooking pizza on the grill is to cook your ingredients before you make your pizza especially meats such as sausage or chicken. If you have raw ingredients in your pizza, you risk the chance that they won't be thoroughly cooked before the dough is cooked or the cheese has melted thus cooking them first helps.
Roll out the dough into whatever shape you like... round, oval, square or triangular if so choose. Prepare your grill for medium-high heat. Once your grill is ready, brush the grates with oil and place the raw dough on the grill - alternately brush the dough with oil. Cook for a couple of minutes with the lid closed. Periodically check the colour of the underside of the pizza crust and once browned remove from the grill. Don't worry about thoroughly cooking the dough - this is the first step in the process.
Place the pizza crust on a cutting board grilled side UP and spread the tomato paste, pesto or your choice of sauce all over the top of the pizza crust. Season with salt and pepper if needed and then add your toppings. Top with cheese and place the pizza back on the grill 5-10 minutes with the lid CLOSED. Leaving the lid closed will help melt the cheese and keep the temperature up inside the grill. Check the bottom of the pizza often and don't be afraid of rotating the pizza to cook evenly. If you wish, place an inverted pie plate or a pot lid over the pizza... this will increase the temperature and melt the cheese as well.
Remove from the grill, let cool a bit, cut into slices and enjoy!
