Sausage con Queso

HOQ vertical recipe

Are you looking for a comforting and easy to prepare appetizer for a crowd? There’s nothing better than a warm cheese dip with all the BBQ flavor from the summer.

1 medium    Onion – diced
2 TB            Olive oil
2 cloves       Garlic – minced
1 lb              Chorizo sausage – small cubes or House of Q Sausage
1                  Tomato – diced
1                  Jalapeno pepper – diced
1 TB            Flour
½ cup          Chicken stock
1-2 lb           White melting cheese such as Jarlsberg, Gruyere
½ cup          House of Q Sugar and Spice or Rock’n Red BBQ Sauce

Heat the oil in a sauté pan and cook the sausage.  Remove from the pan and add the onion and garlic.  Cook until soft.  Add the tomatoes, Jalapeno pepper and flour.  Heat while stirring then add the chicken stock.  Stir until the stock has been absorbed onto the vegetables.  Once it is heated through, reduce the heat and add the cheese slowly in batches while stirring.  Continue adding the cheese as it melts into the mixture until it has all been melted together.  Add the sausage and the BBQ sauce into the mixture and heat through.  Serve with tortilla chips, pita triangles or your favorite dipping bread.
