The BBQ Tips are back!  It's the fourth season of BBQ Tips and there's more recipes, more tips and more fun starting May 6th.

Top Secret Turkey Burger!

 

After 16 weeks of providing individual, secret ingredients through the summer of 2010, they all accumulate to this fun and tasty turkey burger.  Hope you played along for the contest but in the meantime, let's make some burgers!

2-3 lbs             JD Farms ground turkey
¼ cup              Shallot/onion
1 TS                Sisters Secret Fragrant Chili
1 TB                Honey
2 cloves           Garlic - crushed
1                     Apple – grated (Gala, Granny Smith or Pink Lady)
1 TS                Pepper
2 TS                Salt
1 TB                Oregano
                       House of Q Apple Butter or Sugar & Spice BBQ Sauce
½ lb                 Bacon – pan cooked till just crisp
                       Tomato
                       Jarlsberg Cheese (slices or grated)
                       Iceberg lettuce (shred or leaves)
                       Mayonnaise

                       Fresh baked buns

 In a stainless steel bowl, place the ground turkey, shallots or onion, Sisters Secret Fragrant Chili, honey, garlic, apple, oregano, salt and pepper and mix thoroughly.  Portion the mixed meat into equal portions and then form into burger patties.  Set onto a lined baking sheet or a clean cutting board. Once all of the meat has been formed, place the burgers in the refrigerator for minimum one hour or the freezer for 30 minutes.

Meanwhile, prepare your grill for medium heat direct grilling.  Clean the grates and coat with canola oil.  Sear the burgers on one side until charred and firm then turn over.  Once turned over, brush the done side with Apple Butter bbq sauce (or Sugar & Spice for a spicier burger).  Close the lid and cook until the burgers reach 165 F.  Remove from the grill.

Place on a fresh baked bun the mayonnaise, tomato, lettuce and Jarlsberg cheese then of course the turkey burger. Serve with more bbq sauce on the side.


Grilled Watermelon and Peach Skewers with Planked Cheese

This is an awesome starter to a summer party or even as a dessert.  If you watch the video, we had a fantastic wine with our skewers and cheese...  the wine is Matua Sauvignon Blanc from Hawks Bay in New Zealand.  Fantastic with our dish and it would even be fantastic with last weeks recipe with the oysters.

                    Watermelon - cut into cubes
                    Peaches - stone removed and quartered
2-3 TB           Mint - minced
1                   Skewers
2 TB              Lemon vinegar (Source: Well Seasoned)
2 TB              Nona Pia’s Fig and Balsamic vinegar (Source: Well Seasoned)

                    Cedar plank
                    Camembert cheese wheel
                    Stonewall Kitchen Garlic and Onion Jam (Source: Well Seasoned)
                    Crackers

Cut up the fruit and place the pieces on skewers alternating a piece of peach and then watermelon.  Set aside. 

Place the wheel of cheese on top of the cedar plank.  There is no need to soak the plank for cheese...  you will be simply warming it on your grill.  Place a generous amount of the Garlic and Onion Jam on top of the cheese.

Prepare your grill for medium-high heat direct grilling. Place the cedar plank with the cheese in your grill and close the lid. Keep the lid closed and after ten minutes or so take a peak at the cheese...  it is done when the cheese is starting to get puffy however not bursting the outer layers.  You may need to close the lid and let it cook longer at this point in time. Once done, remove from the grill and set aside.

Grill the fruit skewers for a few minutes on each side of the fruit.  You are simply warming the fruit rather than cooking it thus it won't take that long.  Once done remove from the grill and drizzle with Lemon Vinegar, Fig and Balsamic Vinegar and the fresh mint.

Top Secret Ingredient: Tomato (a great alternate on your skewers with the watermelon)
