Sirloin Taco's

When thinking of Mexican foods, many North Americans think of tacos. This recipe is a variation that incorporates the most favored grilled meat for Canadians - beef!

Serves 6
2 pounds Top Sirloin Steaks - trimmed
Olive oil
1 TB Kosher Salt
1 TS Paprika
1 TS Granulated Garlic
1 TS Ground Black Pepper
1 TS Dried Thyme
10-12 Flour Tortillas, warmed
Grilled Tomato Salsa
Sour Cream, diced onions and Guacamole
Shredded Cheese - Pepper Jack, Cheddar, Blue, Cambazola or Brie as examples.

Mix the dry rub ingredients in a bowl. Trim the steaks, if needed and rub thoroughly with the spice rub. Let rest at room temperature while preparing the grill.

Prepare the grill for direct grilling at medium-high temperature. When ready, grill the steaks until medium rare or 145 F internal temperature. Remove and let rest covered with foil.

Prepare all the additional ingredients including warming the tortillas. When ready, slice the steak into thin diagonal slices and place on a plate. Allow each guest to make his or her own taco. Additional ingredients can easily be added to the spread such as grilled peppers, onions, hot sauce or whatever else you find in your kitchen!


Beer Brined Pork Chops with Smashed Potatoes and BBQ'd Onions

Brining pork is a great way to add flavour deep in the meat. Use a dark malty flavoured beer to add complexity to this dish:

Beer Brine

2 Cups Water
2 Cups Dark Beer
1/4 Cup Kosher Salt
3 TB Molasses
Ice
Pork Loin Chops - cut thick

Mix the ingredients together to dissolve all of the salt and molasses. Chill and place the pork chops in the brine. Brine for a minimum of 4-6 hours or overnight. Remove from the brine, rinse and dry off with a paper towel.

Rub

3 TB Black Pepper
2 TS Salt
2 TS Thyme (ground)
Garlic - powdered or granulated

Mix thoroughly and dust each chop with the rub.

Prepare your grill for direct medium-high heat grilling. Sear each chop to add colour and "crisp-ness" to the outside of the chops. Cook to an internal temperature of 150F and let rest for 5 minutes.

2-3 lbs Diced Onions
Butter
Apple Butter BBQ Sauce

Simmer the onions with butter until the onions are soft - about 15 minutes. Add the bbq sauce and continue to simmer until the sauce is warmed through and has started to thicken.

Smashed Potatoes

This side dish works great with pork chops and is very flavorful when small baby potatoes are available.

2 Lbs Baby Potatoes
Salt
Butter
Diced green onion

Simmer the potatoes in salted water until tender - approximately 15 minutes. Drain and add the butter. Allow the butter to melt while keeping the lid on. Season with salt and pepper and replace the lid. With a hand towel, secure the lid (don't burn yourself) and aggressively shake the potatoes against the lid and thus smashing them. Remove from the pot and stir in the diced green onion.
